While cruising through bloggerland, I happened upon this fantastic fall delight: A pumpkin recipe.... Pumpkin Snickerdoodles. And, they didn't last long in this household. Here's the recipe:
Ingredients
- 3 Cups all-purpose flour
- 2 Teaspoons cream of tartar
- 1 Teaspoon baking soda
- 1/2 Teaspoon salt
- 1 Teaspoon pumpkin pie spice
- 1/2 teaspoon Nutmeg
- 1 1/2 Cups sugar plus another 1/4 cup
- 2 Sticks unsalted butter, softened
- 1 Large egg
- 3/4 Cup pumpkin puree
- 2 Tablespoons ground cinnamon
3 cups all-purpose flour
2 tbsp cream of tartar
1 tsp baking soda
1/2 tsp salt
1 tsp pumpkin pie spice
1/2 tsp nutmeg
1 1/2 cups sugar plus another 1/4 cup
2 sticks unsalted butter
1 large egg
3/4 cup pumpkin puree
2 tbsp ground cinnamon
Instructions
Pre-heat oven 350 degrees. Line 2 baking sheets with parchment.
In a large bowl mix together all dry ingredients. In a separate bowl cream together butter and 1 1/2 cups sugar. Beat in the egg. Add the pumpkin and mix thoroughly. Slowly add the dry mixture a little at a time until incorporated. Chill for one hour. In small bowl mix the remaining 1/4 cup sugar and cinnamon. Scoop dough and roll in sugar/cinnamon mixture. Place ball on cookie sheet 2 inches apart. Bake 9 minutes or until edges turn golden brown.
