Softly Falling Snow

There is something quite idyllic about softly falling snow, especially when you can say that all of your corn is off. For those who don't have your corn off yet, I know you are perhaps not so happy about our early winter. But, with the latest storm we had and with the softly falling snow of today, it's hard not to feel like you are living in a snowglobe. The icicles formed on the old cedar fence, the gorgeous frost design on the windows, the tree limbs covered with a layer of ice and snow - I simply couldn't resist bundling Isaac up to enjoy the softly falling snow this morning. Watching him try to toddle in his snowsuit, and take in the view from his little wagon and then promptly drift off into dreamland was enough to make my mama heart smile. He is still off in dreamland now, with his wagon parked nicely in my back kitchen so I can hear him if he wakes up. He has a slight cold and I know that fresh air is good for him. I came inside to enjoy a cuppa and some gingerbread cookies - that pretty much just topped off my morning.

Boy, I love Christmas holidays!

And, as much as I know how some of you don't want that white stuff, I'm excited for a white Christmas this week.

Thumbprint Cookies



These cookies are super easy to make, they are only a few ingredients! And, they are wonderfully gooey and tasty to eat!

Here's the recipe:

1/2 cup butter, softened (the trick to gooey deliciousness is to not use melted butter)
1/2 cup brown sugar
1 cup flour
1 egg separated
Your favourite Jam
Coconut

Mix butter, sugar, flour, and egg yolk only. Should mix into a ball and be easy to handle. Roll into one inch balls. Roll in egg white (not beaten) and then coconut. Make a dent in the top of each cookie, using your thumb or I used the end of a wooden spoon. Fill the dent with jam and back at 350 degrees for about 15 minutes. Watch carefully near the end, they can overflow - which makes them just as delicious but as my husband would say "Are they still photo-worthy?"

To Korea with Love

My sister, Brianne, is teaching in Korea right now. When someone you love is far away, you especially miss them around the holidays. So, I mailed a little Christmas Countdown with treats as reminders of home and little uplifting notes. We love and miss that girl, but we know she's having an amazing experience teaching in Korea! 즐거운 크리쓰마쓰 Brianne!!


And, I know auntie Brianne will appreciate this too!
